Our products are vacuum-packed, with the exception of free-range chicken and dry sausage (or dried sausage), which are wrapped in paper, as well as egg cartons.

In the refrigerator, the maturation of the meat continues in its packaging. The longer you wait to consume it, the more pronounced its taste and smell will become. Therefore, adjust the storage time according to your taste preferences. Our advice is to only keep in the refrigerator the meat you plan to consume within the week and freeze the rest to halt the maturation process.

Thanks to vacuum packaging, you can preserve your meats for up to 10 days in the refrigerator. Please refer to the labels on each bag that indicate the Expiration Date (D.L.C.). Vacuum packaging is ideal for optimizing the preservation of foodstuffs. It acts as a barrier against oxygen, which causes food degradation and aging. The shelf life is extended because the development of microorganisms and enzymes is limited.

Vacuum packaging has no impact on the taste and quality of the meat. However, certain visible aspects associated with vacuum packing may be surprising:

– The color of the meat can become darker or lighter: this is completely normal and safe. The absence of oxygen causes a change in the state of the pigment responsible for the red color of the meat, resulting in a color change. This does not mean that your meat is damaged. The nutritional and taste qualities are not affected. This color change is reversible: the meat returns to its normal color within an hour after unpacking the product. Upon opening the packet, do not be surprised if the smell of the meat is somewhat stronger. This is completely normal, as vacuum preservation has intensified the aromas that suddenly escape from the packaging.

If one of the products you received is no longer vacuum-sealed, do not worry. Your product is still consumable, however, its Use-By Date (UBD) will be reduced by 2 to 3 days.

Practical freezing:
Your vacuum-sealed meat can be preserved much longer than usual in your freezer without any deterioration.

It is preferable to freeze it as soon as possible and before the Use-By Date, without touching the vacuum-sealed bag that protects your meat from frost. The freezing of ultra-fresh products ensures excellent freshness once the product is thawed.

Thus, you can store your meats for several months without any worry, up to 12 months. Always freeze the pieces flat, never in a ball. Ideally, thaw a product in the refrigerator (+ 4° C) and never refreeze a product that has been thawed. The thawing duration varies from 12 hours for a 150-gram steak to over 24 hours for a 1.5-kilogram beef roast.

There are various cooking methods available. Prior to any preparation, it is essential to remove the product from its packaging to allow it to reoxygenate. In fact, exposure to open air allows it to regain all its characteristics such as color, smell, and texture. For optimal quality, remove the meat from your refrigerator and its packaging approximately an hour before cooking.

Cook according to your preferences and allow the meat to rest in a warm place after cooking. For instance, a beef roast should be allowed to rest for ten minutes after cooking with the oven turned off and the door open. You can also wrap the grilled items in aluminum foil to keep them warm.
Grilling instructions:

Use a very hot pan or grill. It is essential to sear the meats.

Blue – Cook for approximately 20 seconds on each side for a slice that’s one centimeter thick. The edges will primarily remain red on the outside. Saignant – Cook for between 45 and 60 seconds on each side for a slice one centimeter thick.

A Point – Cook for approximately one minute and thirty seconds on each side (turning several times) for a slice one centimeter thick. The edges no longer show any red, and drops of blood can be observed forming on the exterior.
