It all started when the founder, Jean Bissonet, took over a butcher shop in Suresnes in 1954 with his wife Monique. Subsequently, he opened other butcher shops, including the most prestigious one located on rue du Faubourg Saint-Honoré, thus supplying major hotels, restaurants, and even the Élysée. This father-to-son butcher tradition dates back to the time of Napoleon III.” The richly illustrated book explores the history of the Bissonet family through intergenerational transmission, portraits, regions, terroirs, and breeders with whom they collaborate. It also provides an insight into Rungis and the philosophy of each member of the family business, including the grandsons who continue to uphold the fame of Boucheries Nivernaises. The book features family recipes. It’s worth noting that there are English translations at the end of the book for an international audience.
