Our ‘Bresse Chickens’ are selected and sorted according to their weight and sex: we only take females because they are fatter and better calibrated. The term ‘Bresse Chicken’ encompasses both sexes: rooster and hen.
Bresse chickens are raised in ‘free-range’ conditions on grassy paths and finished on spruce, for 120 days. They have free access to a minimum of 10 square meters of grassy path per chicken.
Bresse chickens come from the Gauloise or Bresse breed, a white variety.
Selection, hatching, rearing, and slaughtering are exclusively located in Bresse.
Enhance your cooking experience by letting your meat reach room temperature. Simply take it out of the refrigerator 30 minutes to an hour before you plan to cook it.
During cooking, you can baste the chicken with its own juices to keep it nice and juicy.
