100-Day Farm-Raised Chicken from Marlat Farm
The poultry is raised outdoors for 100 days using the traditional Landes farming method (Farm located in Amou). They are fed with cereals and a traceable non-GMO soy-based feed.
Give your meat a chance to reach room temperature by removing it from the refrigerator 30 minutes to an hour before cooking. This helps ensure even cooking. Meanwhile, unseal the vacuum-sealed bag and let your meat breathe. Vacuum-sealed items are designed for extended shelf life.
To achieve a crispy skin on the chicken, start by thoroughly drying the skin by patting it with absorbent paper. Then, generously season it with salt and possibly other spices of your choice to enhance the crispiness by drawing out the moisture. Finally, use a thin layer of melted butter or olive oil to brown and crisp the skin during cooking.
